Phase one: Begin by washing and peeling your carrots (try to find the thinnest longest carrots you can). Boil the carrots in salt water for around 4-5 minutes. Flip the carrots and make sure to boil them stem side down as well. Allow the carrots to cool.
Phase two: Once the carrots are cooled, cut them down the middle creating carrot halves. In an oven safe pan, add two ounces of beef broth, maple syrup, butter cubes, salt and fresh thyme. Bake this on 375 with the carrots until all of the liquid has absorbed. Add on crushed pistachios, and broil this for 10 extra minutes until they are golden.
Plating: Serve with a protein of your choice (Epis lemon chicken works well).
