Phase one: Crack and whisk your eggs slowly for at least 8 minutes. Once whisked, grab a strainer and strain out the excess egg that was not combined. Season the eggs with salt and white pepper.
Phase two: Heat a pan with lots of butter. Spread the egg in the pan very thin and try to scramble the middle a bit (spreading out excess egg to cover holes). When the eggs are around 90% done, toss on a few pieces of cheddar cheese. Turn off the heat and fold the omelet inwards. Add a bit more room temp butter on top of the omelet off of the heat.
Plating: Serve with pico and some trumpet mushrooms!
