Phase One: Begin by dicing up as much fresh garlic as you’d like. Then, sauté in a fat of your choice (tallow or oil works well). Throw in a little epis at this step if you have it.
Phase Two: To the pan, add in chile flakes and your deveined washed shrimp. Cook the shrimp on low heat until you see pink. Then, add in cut up butter and white wine. Allow the wine to cook off on low heat before adding your cooked pasta and pasta water.
Phase Three: To make the scampi cheesy, add in some Pecorino Romano cheese at this step and thoroughly stir it in. To finish, turn off your heat and squeeze in some fresh lemon juice.
Plating: Plate the pasta with paprika and more parsley!
