Couscous Salad

Protein:

·Cherry wood smoked bacon

Produce:

· Bell peppers

· Brussel sprouts

· Lemon

Dry Spices:

· White Pepper

·Garlic powder

·Oregano

·Salt

·Black pepper

Dry ingredients

· Cooked couscous

· Chickpeas

· Rice wine vinegar

· Balsamic vinegar

· Maple syrup

· Olive oil

· Tahini

Phase one: Sauté brussel sprouts and chopped bell peppers (or whatever vegetables you have on hand) in a fat of your choice. Then, toast your chickpeas in the pan. Once this is done, cook your cherry wood smoked bacon.


Phase two: To make the tahini dressing combine rice wine vinegar, balsamic vinegar, maple syrup, lemon, tahini, and black pepper in a bowl. Once combined, whisk in olive oil until the dressing is frothy. If you want this dressing sweeter, add more maple syrup, if you want it nuttier, add more tahini (adjust how you see fit).


Phase two: Season the couscous with oregano, garlic, white pepper, and salt. Combine the toasted chickpeas, bacon, veggies, and the couscous, making sure to fully incorporate everything together. Once it is well mixed, add your tahini dressing (make sure not to add the dressing too early because the couscous absorbs the liquid).
