· Parmesan Cheese
· Black Pepper
· High temp oil of your choice
· Green risotto
Phase one: Begin with your leftover green risotto (the recipe is posted). Combine the risotto with canned crab and ricotta cheese and combine. Season the risotto mix with black pepper, thyme and sage.
Phase two: Roll the risotto mix into balls and cover in cornstarch. Coat the risotto balls in egg wash (water and egg mixed together) and then into bread crumbs mixed with parmesan cheese.
Phase three: Fry the risotto balls in 350 degree oil until they are golden brown. Drain off the excess oil and allow it to rest before serving.
Plating: Serve with hot sauce or dipping sauce of your choice!
