Ginger Lamb Soup

· Scallions

Dry Spices:

· Salt To Taste

· Moroccan Spice Blend

Wet Spices

· Epis

· Garlic Confit

Dry Ingredients:

· Beef Tallow

· Bone Broth


Phase One: Begin by sautéing ginger in a fat of your choice, for this, beef tallow works well. To the pot, add in some chopped onions and your lamb. Salt the lamb to taste and cook it off until it is golden brown.


Phase Two: Once the lamb is browned, add in a beef bone broth of your choice and a good amount of water. Season the soup with garlic confit, epis, fresh thyme, scallions, cardamom and a moroccan spice blend.


Phase Three: Once this has cooked down for a bit, toss in chopped carrots, parsnips, and radishes. Allow this to cook off for around 15 minutes and serve!
