Oxtail Masala

· Oxtail


· Shallots (or onion)

· Garlic

Dry Spices:

· Smoked Paprika

· Turmeric

· Garam Masala

· Thyme

· Curry Mix

· Cumin

· Allspice

· Bay Leaf

· Ginger

· Chile Flakes

· Cardamom

· Salt

· White Pepper

· Black Pepper

· Garlic Powder

· Onion Powder

Dry ingredients

· Crushed Tomato sauce

· Brown Sugar

· Fat of your choice

Phase one: Sauté lots of chopped shallots and garlic in some fat. Once the onions cook off a bit, add in cumin, curry mix, turmeric, smoked paprika, garam marsala, thyme, white/black pepper, onion powder, and garlic powder.

Phase two: Once the seasonings have cooked until they are aromatic, add in equal parts crushed tomato sauce and water. To the pot, also add in ½ a cup of brown sugar, ginger, cardamom, clove, allspice, chili pepper flakes, a bay leaf, and a few tablespoons of salt.

Phase three: To the masala add in browned oxtail, or any meat of your choice. Add a lid to the pot and cook for 90 minutes to an hour (when the mixture reduces to half and the oil floats on top).

Plating: Serve with your choice of rice and enjoy!
