Perfect Rice and Beans

Produce:

· Garlic

· Thyme

Dry Spices:

· Cinnamon

· Cloves

Dry ingredients

· Red Beans

· Olive Oil

· Rice

· Beef tallow (or a fat of your choice)

· Quinoa (optional)

Phase one: Start by boiling small red beans until they’re soft. Next, drain and save the excess water. Fry your red beans in some fat (beef tallow works great). To this, add in garlic, thyme, and lots of aromatics. Fry the beans until they crust at the bottom.


Phase two: Once your beans have browned, deglaze the pan with the water you boiled the beans in earlier. Add in cinnamon, cloves, and washed rice (you can throw in some quinoa at this point if you’d like). Finish this off with some olive oil. Put a lid and a dishcloth on the pan, and allow it to cook on the back burner for half an hour.


Plating: Serve with a protein of your choice or eat on its own!
