Potato Salad

Produce:

· Butter Potato

· Red Onion

· Peas

· Bell Pepper

· Lemon

Dry Spices:

· Salt

· Cumin

· Black Pepper

· White pepper

· Paprika

Wet Ingredients:

· Mayo

· Spicy Mustard

· Yellow Mustard

· Seasoned lard

Dry ingredients

· Sugar

· Rice Wine Vinegar

Phase one: Start off by peeling some butter potatoes and boiling them whole (to ensure the pieces don’t get too soft). Once the potatoes are fork tender, remove them from the boiling water and put them into an ice bath to cool them.


Phase two: For your wet mixture, combine mayo, spicy mustard, yellow mustard, salt, sugar, cumin, white pepper, black pepper, and paprika. Once combined, squeeze in the juice of half of a lemon and add some rice wine vinegar. Mix this very well until it is fully incorporated.


Phase three: Dice up your potatoes and add them to the mixture along with your vegetables (peas, bell pepper, and red onion). Finish the potato salad off with seasoned lard and allow to sit for around 4 hours.
