Phase One: To make the seafood sauce begin by finely mincing 20 cloves of garlic, ginger, and scallions. To the garlic add in minced ginger, scallions, chile flakes, Haitian style epis, toasted sesame seeds, and a hot neutral oil (canola works well), and combine.
Phase Two: Once combined, add in a quarter cup of sugar, a little bit of salt, soy sauce, rice wine vinegar, and a splash of fish sauce.
Plating: Serve on top of a white fish (or any fish) of choice!
