· Stock of brussels
· White Pepper
· Black Pepper
· Garlic Powder
Phase one: Begin by washing your stock of brussels and coating it in lots of olive oil. Use speck rather than prosciutto, as it will hold its form better and it is stretchier. Wrap the speck around every other brussel sprout.
Phase two: Season your brussels with salt, black pepper, white pepper and garlic powder. Add more olive oil on top of your seasoned brussel sprouts. Allow the brussels to roast for around an hour at 375.
Plating: Add fig glaze over the top to bring out sweetness, and serve!
