· Peppers of your choice (red, orange, green)
· Chicken bullion
Phase one: Broil your peppers until black and peel off the skin. You can use whichever peppers you’d like (banana peppers, scotch bonnet peppers, red peppers, chile peppers, habanero peppers, soranno peppers). Slightly roast some garlic in the oven until it is soft.
Phase two: Blend the peppers, garlic, celery, ginger, scallions, chicken bullion, olive oil, vinegar, and lots of parsley in a blender until smooth. Season the epis with salt, a bit of sugar, and white pepper.
Phase three: You can jar or freeze the epis.
