Name: Tiramisu Serving: 4 Prep Time: 25 mins Cooking Time: 6-8 hours
· Heavy cream
· Egg yolks
· Vanilla extract
· Italian lady fingers
· Black coffee or espresso
· Granulated sugar
Phase one: Begin by making a sweetened yolk mix. Combine 6 egg yolks and ¼ cup of granulated sugar. Mix with a hand mixer over a double boiler until it is a pale yellow and very fluffy, set aside.
Phase two: Next make your whipped cream. Mix heavy cream and sugar with a hand mixer until it forms little peaks. Set this mixture aside (1.5 cups).
Phase three: Now you will make your coffee blend. Mix strong espresso (or black coffee), with kahlua.
Phase four: Fold the heavy cream into the sweetened egg mix, making sure you don’t overwork it (so it does not become too loose and runny). Once that is combined, add in 4 oz of mascarpone and vanilla extract. Mix lightly until it is all blended.
Phase five: Dip ladyfingers (preferably Italian lady fingers) into the coffee kahlua and line them at the bottom of a dish. Layer this with tiramisu cream, and repeat the process until there are as many layers as you desire. Top this with a thick coating of cocoa powder, and allow this to set 6-8 hours.
