Vegan Pear and Tahnini Pasta

Name: Vegan Pear and Tahini Sauce Serving: 4 Prep Time: 10 mins Cooking Time: 20 mins


Produce:

· Soft pears (Garlic Pears)

·Aromatics (leeks, shallots, onion, garlic)

Dry Spices:

· Salt and Pepper (as desired)

Wet Spices:

· Tahini

· Roasted Garlic paste

· Chile Paste

Dry ingredients

· Olive Oil

· Pasta of your choice

Phase one: Add in your pears, a lot of tahini, aromatics (leeks, shallots, onion, garlic, etc) into a blender and blend until it is a creamy consistency. Add in extra oil if the mixture gets too thick.

Phase two: Sauté roasted garlic and chile paste in olive oil. Cook the mixture down with some pasta water. Slowly incorporate the tahini pear mixture to the oil. Add in the pasta salt, and pepper as desired.


Plating: Top with parmesan cheese (or a vegan cheese) and serve!
